cuddly banana pancakes

Ingredients

  • 4 eggs
  • 1/4 cup vanilla or unflavored protein powder of choice
  • 2 bananas
  • 1/2 cup cup oats [ground into flour in coffee grinder or food processor]
  • 1 Tbsp nut or seed milk [of choice]
  • 1/3 cup dark chocolate chips
  • oil of choice for cooking pancakes
  • toppings of choice: greek yogurt [DF optional], sliced banana, nut butter, cinnamon, maple syrup or honey

Instructions

  1. Place in a blender: eggs, protein powder, bananas, oats, and milk. Blend until all is incorporated.

    If the pancake mixture seems too thick you can add almond milk to thin it out a bit [start with 1 T at a time].

  2. Heat a medium pan or griddle on medium heat with oil of choice.

  3. Add ¼ cup batter to skillet at a time flipping once you see bubbles form at the surface. Add in ½ - 1 tsp of chocolate before flipping*.

  4. Cook for 1-2 minutes on the other side until pancake is cooked through.

  5. Serve warm or freeze until ready to use.

  6. *Chocolate may scorch at this step. For best deliciousness, flip pancake and then place chocolate chips on the already cooked side. It will allow the chips to soften so they continue to melt-in-your-mouth when you eat them.
