green juice Rx
- 1 1/2 cups mint tea
- 1 cup leafy greens [of choice, consider dandelion greens]
- 1/2 cup frozen pineapple
- 1 medium cucumber [quartered]
- 2 celery stalks [roughly chopped]
- 1/4 cup parsley, cilantro OR both [packed tightly]
- 1 1-inch knob ginger [peeled]
- juice 1 lemon
Add all ingredients to a blender in the order listed.
Blend on the highest setting until a smoothie-like consistency is reached.
Pour mixture through a fine mesh sieve into a bowl OR pitcher. Press the pulp firmly into the sieve with a spatula to extract as much liquid as possible.
For pulp-free juice, pour previously strained liquid into a cheesecloth and squeeze tightly to release juice.
Serve cold and enjoy!
