silky soft ginger molasses cookies
- 1 egg + 1 egg yolk
- 2/3 cup almond butter
- 2 tbsp coconut oil, softened
- 1/4 cup molasses
- 1/4 cup coconut sugar
- 1 tsp vanilla
- 2/3 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp ground ginger or 1 tbsp fresh [I use fresh]
- 1/4 tsp allspice
Combine the first 6 ingredients and mix well.
Stir together all the dry ingredients and add to the wet mixture all at once.
Stir to combine.
Chill dough for 15-20 minutes. Roll into balls into 2-3 inch balls flatten a bit once on the cookie sheet. They don't spread very much.
Bake at 350 for 9-10 minutes making sure not to bake too much to lose the softness and let cool on the pan.
Store in the fridge.
