[recipe] silky soft ginger molasses cookies

They are brimming with a rich, cozy molasses flavor and trimmed with all the warm spices of the season to perfectly highlight your holiday.  Yum!

silky soft ginger molasses cookies

Prep Time 40 minutes
Cook Time 10 minutes


  • 1 egg + 1 egg yolk
  • 2/3 cup almond butter
  • 2 tbsp coconut oil, softened
  • 1/4 cup molasses
  • 1/4 cup coconut sugar
  • 1 tsp vanilla
  • 2/3 cup coconut flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ground ginger or 1 tbsp fresh [I use fresh]
  • 1/4 tsp allspice


  1. Combine the first 6 ingredients and mix well. 

  2. Stir together all the dry ingredients and add to the wet mixture all at once.

  3. Stir to combine.

  4. Chill dough for 15-20 minutes. Roll into balls into 2-3 inch balls flatten a bit once on the cookie sheet.  They don't spread very much.

  5. Bake at 350 for 9-10 minutes making sure not to bake too much to lose the softness and let cool on the pan.
