[recipe] simply nourished snickerdoodle cookie

prepare yourselves!  after months of on again off again testing I finally perfected the simply nourished snickerdoodle cookie.  I’m so stinking excited and literally am dancing in my kitchen right now.

Cook Time 12 minutes
Servings 20 cookies


the cookie

  • 1 1/4 cups almond flour
  • 2 tbsp coconut flour
  • 1/4 cup coconut super or monk fruit [lakanto]
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup softened coconut oil
  • 6 tsbp creamy almond butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 egg [or 1 flax egg]

the topping

  • 3 tbsp coconut sugar
  • 1 tbsp cinnamon

Recipe Notes

Combine all the dry ingredients in a bowl and stir well to combine.
Whisk together the wet ingredients and add to the dry, stir well to combine.
Chill dough for 20-30 minutes.
Preheat oven to 350 and line a baking sheet with parchment or silicone.
Position oven rack in the center. Roll dough into 18-20 balls and run them through the cinnamon/sugar mixture to coat evenly.
Place on the baking sheet 2 inches apart and flatten slightly. Bake for 12 minutes and let cool on the baking sheet for 5 minutes before removing.
These guys are fragile!
Store in a container in the fridge or eat straight off the cookie sheet for optimal enjoyment.
