[recipe] tickle me pink parfait

Just because Valentine’s Day is a “Hallmark holiday” doesn’t mean we can’t celebrate the spontaneous invitation to whip up something playful [and pink] in our kitchens, especially something as beautiful as this “tickle me pink parfait.”

Oh you just saw the picture above? Yep #eyecandy.

Ingredients

Chia Pudding Layer

  • 1 can full-fat coconut milk
  • 1/4 cup chia seeds
  • 1/2 tsp vanilla extract
  • 1 Tbsp honey or maple syrup
  • 1-2 scoops Collagen peptides

Raspberry Sauce Layer

  • 1-1/2 cups raspberries fresh or frozen
  • splash of water
  • 1/2 tsp vanilla extract
  • 1/2-1 Tbsp honey or maple syrup optional
  • pinch of sea salt
  • 1 Tbsp chia seeds

Instructions

  1. Combine all chia pudding layer ingredients in a bowl and let it set for 30 min or overnight.

  2. Place berries and water in saucepan over medium heat. Let cook for 5-8 minutes, stirring occasionally.

  3. Once berries are broken down and begin to bubble, stir in vanilla extract, sweetener of choice [if using] and salt.

  4. Simmer on low for 2-3 minutes. Remove from heat, stir in chia seeds and allow to cool.

  5. In 4 glass jars or cups, layer parfait in the following order [starting from the bottom]: chia pudding, raspberry sauce, chia pudding, toppings [of choice].

  6. Enjoy immediately or save in fridge for up to 5 days.

Recipe Notes

HOT TIP :

Consider dividing the pudding layer into 2 and adding 1 Tbsp cocoa powder to 1/2 of it to create a “chocolate layer” OR simply add in a layer of chocolate chips for that decadent appeal.

  • sprinkle of cocoa powder
  • chocolate chips
